What about a broccoli salad? Or just an awesome garden salad with a lot of fun veggies (olives, bell peppers, pepperocinis, and all the usual suspects)?
We like to do just raw veggie salads, and lately we've been pushing it to less than 50% lettuce, which I'm loving! We do a little lettuce, lots of chopped up raw broccoli, chopped carrot, sliced cucumber, and a little shredded cheese. (I would add bell peppers, sliced mushrooms, halved cherry tomatos if my husband would tolerate them!)
or, we do the greens + cheese + sweet + nut formula (spinach, feta, strawberries, almonds. or romaine, mont jack, dried cranberries, walnuts. or green leaf, cheddar, apples, pecans)
With something like chicken and rice, I'd just go with a typical lettuce salad. If it's like the c&r I had earlier this week, it has lots of flavor on it's own and doesn't need much help. If you're wanting something a little special, maybe mandarin oranges? Yum!
Thanks ladies! I didn't even think of a normal salad! haha veggies have been an aversion of mine during pregancy, but those salad suggestions sound so yummy!!

I really the the combo of romane lettuce, granny smith apples, some nuts and gorgonzola cheese. Not a huge fan of sweet dressing, but a raspberry vinagrette goes well with this salad.
Lately I've been making salads with red or green leaf lettuce, olives, cucumbers, tomatoes and either artichoke hearts or heart of palm. I LOVE hearts of palm.
I love to make a salad using broccoli slaw, onions, crumbled bacon, and peanuts. I make a dressing of mayo, lemon juice and a bit of sugar. It's my very favorite salad!
