I LOVE corn chowder! I kind of wing it, but this is what I do:
Cook your bacon and cut it into small pieces. Reserve a few tablespoons of bacon grease and use it to saute an onion (chopped) and a couple stalks of celery (chopped). Once the onions and celery are cooked, add in some cubed up potatoes (I use 6-8 medium sized ones because I like a lot of potatoes in there) and 4 cups of hot water. Let this boil for about 20 minutes until the potatoes start to soften. Then, add in 1 bag of frozen corn (or 2 cans corn), 2 cans of creamed corn, and about 1 cup of half and half. Continue to simmer until it is warmed through.
I think it would be perfectly fine without creamed corn. Maybe just put a little extra corn and cream in there? I like it because it thickens it up a bit.
I also forgot to mention salt and pepper in that jumble of a paragraph above.

I have used a couple splashes of hot sauce when I didn't have the chilies.
OK, so I am winging it, too.
I have:
onions
celery
potatoes
corn
lotsa bacon
ham stock cube
4c water
and I'll add a cup or so of milk at the end. Should work out ok.
