I need some 1st bday party food advice

We are having just a family party at the end of the month for LOs birthday, that still gives us about 30 people (including 13 or so kids). We'll be serving a meal along with light apps (cheese, crackers, salamis, olives, etc). I'd like to do something relatively easy that I can make the day before/that morning and reheat. I was thinking taco soup (basically chili with some extra stuff in it), I have made it a million times and everyone really likes it, then this morning I thought about lasagna which I guess I have never made. I don't want to spend the day in the kitchen, but still want to give the guests something good to eat. Do any of you lovely ladies have any suggestions? tia!

  • if you get no-cook noodles, lasagne is actually fairly easy. the most time consuming is making the sauce (unless you're a jarred-sauce gal) and assembling it. then you just pop it in the oven.

    i would also do a big green salad. but i'm a green salad addict ;-)

  • lasagna can be really easy if you use the no-bake noodles but you will have to worry about keeping it warm if everyone's not going to eat at the same time (vs the soup which could be in the crock-pot)  I do tacos a lot.  I like that everyone can make them how they want...but you do need space for the fixings.
  • What about Mac & Cheese? You can easily make that as a casserole the night before, and then stick it in the oven 30 mins beforehand.
  • ditto to lasagna and salad. pretty easy. we just went with pizza - even easier!
