Nifr: good freezer meal?

Sorry to post and run but I am so tired. I'll check in am for sure. And prolly at three am when I pee ;) lol. We are having dinner with dhs great uncle and aunt and his one cousin and her hubby we really like. That's all covered pizza salad and deserts. I want to bring domething to freeze. They have been loving and accepting of me from day one, which is alot more than I can say for most of dhs family. Anyways the gu is very ill. Colon cancer that has matasticized go his lungs. Dh and I are both devastated. I've offered to help in any way I can but of course they say no No were fine etc etc. So I'm going to make a freezer dinner or two. His great aunt is amazing and I know she has to be exhausted and they aren't going out like they used to bc of the chemotherapy and radiation. Sorry long and rambling. I'm just very sad. Any good freezer dinners? Or any other ideas? I make killer stuffed shells but we just had them for the holidays. I really want to help and if I just bring the food they can't say no. Sorry for the giant paragraph I'm on my phone. Thanks ladies.

  • Sorry to hear about DH's uncle.  Cancer is so devastating.  You all will be in my t&p's.

    Chili freezes well.

    Chicken and rice casserole, with mushroom or cream of chicken soup (you can even throw some frozen green beans in for a complete meal.)  

    Marinated chicken or flank steak both freeze well.  

    Spaghetti sauce.  

    Chicken noodle soup.  

    Enchiladas.

    Taco casserole (taco meat, beans, corn, jar of salsa, olives, diced green chilies). 

    Italian Chicken. Cooked diced chicken with tomatoes and black olives.  Season with garlic, Italian seasoning, salt and pepper.  Serve over pasta.

    I think thats all I've got for now!  I will think about it some more!

    I don't freeze much because we don't have the space.

     But: 

    Chili

    Lasagna

    Beef stew or Chicken Stew

    I have done chicken enchiladas- Chicken and cheddar cheese filling with cream of chicken soup, sour cream and green chilis for the sauce. I can give you the recipe if you want. It is one of our favs and is so easy!

  • I have a good recipe for Italian Pasta (good to freeze for up to 3 months and it makes a ton!!)

    2 cans stewed tomatoes

    1 large can tomato sauce

    1 can diced tomatoes

    Oregano

    Garlic

    Parsley

    2 cans V8

    Italian sausage

    1 lbs ground beef

    1 med onion

    Green pepper (optional)

    Pepper to taste

    Brown beef with onions and garlic (I use 1-2 tsp minced garlic). On a skillet, brown sausage (chopped). Throw everything in a stew pot and simmer for 2 hours. Serve with hot pasta.

  • I make these two at a time (one to eat right away and one for the freezer) and they are so easy!  It's mexican lasagna:

    I modify it depending on what I like and what I have, like turkey or beef instead of chicken or regular tortillas instead of spinach, etc.  The basic recipe is good though, and you can control the heat of the sauce too.  Otherwise I agree with the PP's, everything sounds delicious!
