Favorite Freezer Meal Recipes

Hello All,

I am starting to do research on freezer meals so I can get started in a few weeks.

Anyone have any good recipes and/or links they'd like to share?

I have a picky husband who won't eat cheese or anything creamy so I know I am going to have a hard time finding good meals that freeze well because I am thinking of casseroles, etc.

We like soup so I plan to make several soups.

  • I can tell you what I've made and if you're interested I'll PM you a recipe...I'm a chef and don't really use them so I have no links.

    I've made

    chicken pot pie

    Navy bean soup with kale

    spicy lentil and sausage soup

    chicken soup with ginger and lemon

    meaty pasta sauce

    veggie pasta sauce

  • I plan to do a lot of lasagna, soups, stews, and casseroles.  I also want to do a ton of breakfast casseroles and quiches, because breakfast seems to be one of the hardest meals to get done when I am tired and dealing with the kids.  It would be wonderful to just throw a casserole in the oven and get on with my day.

    If you google freezer meals you can find entire blogs full of recipes.

    oh yeah!, I made pancakes and french toast and froze them too...they heat up fine in the microwave (or toaster oven for the french toast).

  • Believe it or not, Spaghetti (with the sauce in it) freezes really well. If you put it in freezer bags, you can just stick the bag in some boiling water and it turns out just like fresh.

    And of course, soup, lasagna, bbq, and I have a whole bunch of breakfast foods like sausage and pancakes individually wrapped so we can just grab and go. I started freezing early because my BF INSISTS that he can eat a whole box of pasta (no, he can't).

    Spaghetti sauce

    Chicken parmesan patties (pre packaged)

    Chicken alfredo

    Broccoli cheese chicken rice casserole

    I also plan on making and freezing

    Chicken pot pie

    Lasagna

    Chicken soup

  • So far I've made lasagna, shepherd's pie, bean burritos, and am currently making chicken enchilada's.  I plan on making some "healthy" pancakes one morning this weekend, and have also seasoned hamburger patties and frozen them so that DH has something easy to make.

  • Does making these ahead of time and freezing them make things a lot easier? I just mentioned to DH that I want to do this one day and he seems to think that it's just a waste of time when we can just buy frozen meals. Would any second time moms really recommend freezing ahead of time? And if I did do this, when do you think I should start? (LO is due March 15th)

    Good idea about freezing the spaghetti in bags- I will definitely be doing that!

  • I made some casseroles for the freezer, but I also diced and cooked some chicken breasts and browned some hamburger to put in bags in the freezer. I figured I could toss them in with pasta, top a pizza crust, make a salad, etc. with the meat that's already cooked when I get sick of casserole.

  • How do you all go about freezing casseroles?  Do you just make them in those disposable aluminum pans and freeze them?
