I like Ruby Caroline and Ruby Catherine. They both sound great and I don't think you can go wrong with either. My great-aunt is named Ruby and I love that it's coming back! I think it's really cute.
I love Ruby Caroline. Ruby Catherine is pretty, but since Catherine is usually pronounced as two syllables, you'd have three two-syllable names in a row, which doesn't flow well to me. I love the name Violet, too, but with the two-syllables, stress on the first syllable, and the same "i" sound, it's a little too rhymey with Simon. HTH!
