Typically if it has a sauce or it's in liquid it will freeze well.
I also ordered one of those Entertainment books this year - ebates is doing a sale on them, so I got it for $20 with free shipping. There are coupons for salad places in our area and subway, etc.
So I grabbed a bunch of takeout menus for places in the Entertainment book and highlighted the healthiest options on the menu so we could just pick from that stuff when in a bind.
I made spinach and black bean enchiladas, lasagna, chicken and sausage gumbo, chili, and corn soup. healthy versions of course. Anyone have some great soup recipes?????

Also, I have been making these for a quick lunch. They freeze great.
Empanadas:
2 Pkgs. thawed empanada dough
Shredded chicken or pork (I use 2 chicken breasts and 1 lb of pork butt - easy in the crockpot)
can of black beans drained
bag of frozen corn
8 oz. shredded cheese
fill each empanada round with about a tblsp. of meat. Add a little bit of corn & black beans. Finish with cheese.
Fold dough over and crimp with fork. To freeze - place them on a cookie sheet and freeze for about 2 hours.
You can then place them in a freezer bag.
Take from freezer and bake at 400 for about 30-40 minutes.
This will make 20 empanadas.

I bought a bunch of pyrex at Sam's Club last week, ($25)- they all have lids and all are ready to take out of the freezer and into the oven/stovetop.
I also bought a few organic chicken pot pies that I keep in the freezer. Let me know if you want any recipes, I'm a pretty good cook
