NTR: give me your best mac and cheese recipe!

The LOs have never had ham so we want to do ham and mac and cheese.  Ive never made homemade mac and cheese and felt better giving them that than box stuff?

    You have to use REALLY sharp cheese though to get the most flavour.

  • I LOVE this recipe for a baked mac n cheese.  Personally, I'm not a fan of super cheesy mac and cheese and this is the best combination of cheese flavor without being too goopy.

    box of pasta
    3/4 lb sharp cheddar cheese
    1/2 lb Gruyere cheese
    1/2 cup Parmesan
    3 tbs butter
    3 tbs flour
    2 cups milk
    1/2 tsp onion powder
    1/2 tsp salt
    1/8 paprika (Cayenne pepper)
     
    Cook pasta & drain
    toss cheeses together
    melt butter in sauce pan over med heat
    whisk in flour until smooth & slightly bubbly
    slowly add milk while whisking
    add onion powder. salt, paprika
    bring to a boil, reduce heat & simmer 3 minutes
    remove from heat, whisk in 2 1/2 cups of cheese
    add cheese sauce to pasta
    Layer pasta and remaining cheese in caserole dish
    add breadcrumbs
    beak at 350 for 20 minutes
    broil for last 2 minutes

  • 1 lb. Pasta

    1 1/4 block of velveeta

    1/4 cup milk

    4Tb butter

    Cook pasta and add the rest of ingrediants to bowl . Cut cheese into cubes and microwave the mix until it is all melted. (it is ok if there are a few chunks of cheese still). When pasta is done, drain and pour all of cheese mix in and mix well. yummmm

  • Yield: 8 servings.
    8 ounces (2 C.) dry Elbow Macaroni
    2 Tbsp. Nonfat Dry Milk
    2 Tbsp. Flour
    1 Tbsp. Butter, melted
    1 1/4 C. boiling water
    3 C. (12 ounces) grated American cheese, divided
    1/4 tsp. Salt

    Cook macaroni according to package directions; drain and set aside. Heat oven to 350 degrees. In a large bowl, mix dry milk, flour and butter. Gradually add boiling water, beating constantly. Add 1 cup cheese and continue beating until smooth and creamy. Stir in macaroni, 1 cup of the remaining cheese and salt. Transfer to lightly greased 2-quart baking dish. Cover with foil.

    Bake 25 minutes. Remove foil. Sprinkle with remaining cheese. Continue baking 1 minute, or until cheese melts.

    I don't know if you have ever been to a Luby's, but this is there recipe. I have tried several recipes and this is by far my favorite!
