suggest a side.. im getting bored

Im getting bored of the same old same old.... I have an chicken oven roater in and it will be done in 45 min.  give me some sides suggestions i can make for the LOs and I.

I have some red pepper, green peper, zuchinni, potatos, sweet potatos, carrots, string beans... umm i think those are the veggies i got?  but i may have more so lets hear some ideas?

I make a really simple stir-fry thing with zucchini & onions, just saute them with a bit of olive oil and s&p. You could also do that really yummy creamed zucchini thing, with breadcrumbs on top - I always love that one too. You make a simply white sauce, pour it over the zucchini and onions, put some breadcrumbs on the top, and then bake 'till soft. Yum!
