Are there any good recipes for something like this? (and must be vegan)
We're going to Disney in the morning & I'd love to throw something in tonight so it's ready in the morning.

Is there such a thing as crockpot baked french toast?
Okay, that is very far from vegan in lots of ways.
Crockpot tofu breakfast surprise?
crockpot steel cut oats.........you wake up to your house smelling like HEAVEN!
this is one variation, but you can change up the flavors....i've done it with pumpkin, with apple, etc:
Creamy Banana Nut Oatmeal
2 c steel cut oats, rinsed
3 c milk
3 medium sized overripe bananas chopped or mashed
4 c water
1 c sugar
2 tsp cinnamon
1/4 c maple syrup
walnuts as desired
just put it all in the crockpot (except nuts), mix and cook on low for 8 hours (while you sleep). Sprinkle walnuts on top. ENJOY!
FYI.....this is a HUGE batch, so you may want to halve it.

That sounds great...but I"m out of the steel cut style & only have rolled oats. can i sub?

not sure I would do that cooked overnight....they cook too quickly. You could try, but I'm sure the liquid would be reduced as well.
I'm not sure how much altering you would have to do to make any of these vegan but the crockpot lady recently posted a whole list:
