In a food rut. Ideas?

I've become so uninterested in the food I've been eating so hopefully you ladies will help me out! I like simple, easy and fairly healthy. Me and the kitchen don't mix well :)

  • Meal - Spaghetti Broccoli and Chicken.  Dice and cook chicken, mix everything together with garlic and olive oil.  Top with parm cheese.  Easy and takes less than 20 mins.

    Snack - I keep dried fruit in my desk at work, I am also hooked on grapes.

  • I feel like I've been in a food rut too. Just kind of tired of eating all the time and not feeling like we have much variety.

    My favorite snack this week has been a salad with a mound of cheese and croutons. I think the dressing is what really does it for me. I also like cottage cheese with potato chips (the cc is a great source of protein).

    I'm blanking on my favorite, easy meal right now...I like to use any random marinade we have in the fridge on pork chops and serve them with couscous. I LOVE couscous.

  • Hmm...some of our favorites are:

    Chicken Enchiladas (good for leftovers/work!)

    Shred cooked chicken breasts or a grocery store rotisserie chicken (about two cups), mix in a small container of low fat sour cream, a handful of lowfat cheese (any kind), a small can of chopped green chilis (drained), two chopped green onions, and whatever else you want (we like thawed, drained frozen spinach  and black olives).  Roll up in whole wheat tortillas. Place them in a greased pyrex dish.  Pour a can of your favorite low sodium enchilada sauce over them (we love Trader Joes).  Sprinkle with cheese.  Cover with foil and bake at 350 until bubbly (maybe 30 minutes?).

     

    French Dips

    Buy roast beef from deli.  Heat up and put on yummy rolls.  Make au jus according to packet.  Serve with salad/frozen fries/etc.

     

    We love the Costco raviolis.  They come in two packs and we freeze one pack until we are ready.  Easy and delicious. 

     

    I bake chicken breasts like twice a week.  Easy and yummy.  I put them in a sprayed ceramic baker (with a ceramic lid) and cover with any type of Lawry's marinade (store brand is yummy too).  Bake at 400 for like 30 minutes and you can't go wrong.  Always moist.  Serve with salad/veggies/rolls, etc.  Good luck!

    That burger looks so good. I haven't craved meat in a while but man I really want one of them!
