Anyone a vegetarian and their spouse isnt?

I have been a vegetrarian since I was a kid but DH & Lil both eat meat. I have been really struggling with dinner lately b/c I try to make things we can both eat so I dont have to make a bunch of different things, but its so hard! Please share some dinner suggestions with me:)

  • Me!  DH & DD #1 are meat eaters, I am not.  I do sometimes end up splitting meals.  For instance, I'll make fajitas and cook beef or chicken in one pan, veggies in the other, and then everyone grabs whatever they want for their plate. 

    But we also do a lot of things like 7 bean chili, homemade pizzas (My H loves cheese pizza better than any meat pizza lol), baked pastas, twice stuffed baked potatoes w/ salad, stuffed portabello mushrooms, etc.  Tonight we're having meatless pasta fagioli.  Crockpot - should be finished when I get home!

  • This is the situation with my brother and sister-in-law.  She's a vegetarian, he's not.  She does most of the cooking.  She eats fish though so she'll make a lot of fish, shrimp, etc.  But she'll make a lot of stir-fry type dishes or pastas and make him some chicken on the side that he can just add to the dish.  Hope this helps, I can only imagine how hard that is!

  • I gave up the veg life when I got pregnant but I was for 13 years.  Four of those years were during the beginning of SO and I's relationships so we had the same issues.

     We made a lot of vegetable stir fry with different vegetables and sauces with and without the Morning star fake chicken strips.  We also made Boca crumble tacos, Boca chili, and veggie/rice casseroles.  

    There is an amazing recipe for a Moroccan stew with lentils and squash that I make from time to time, thats pretty healthy too.  You would have to google it though because I can't remember the site that I use.

  • Kinda.  We've determined I don't eat things with four legs.  So no beef, pork, lamb.  I do eat sky and sea creatures, though.  So turkey, chicken, fish.  DH isn't picky so he doesn't mind eating what I cook even if sometimes it doesn't have meat at all.  One thing I make that he loves is spinach and mushroom lasagna.  Here's the recipe:

    12 No boil lasagna noodles

    16 oz cottage cheese (light or fat free, or full fat if you are feeling daring)

    One package cream cheese (not sure how many ounces this is, but one of those rectangular packages.  Maybe 8 oz?  We use 1/3 less fat cream cheese, but fat free will do too.)

    1/4 cup sour cream

    2 cups mozzarella cheese

    1 egg

    parmesan cheese (I just use however much I feel like)

    2 10 oz packages of frozen chopped spinach

    10 oz mushrooms

    1 jar spaghetti sauce

    Defrost and cook spinach with mushrooms until cooked thoroughly.  Set aside.  Combine cottage cheese, cream cheese, sour cream, 1/4 cup mozzarella cheese, egg, and about 1/4 cup parmesan cheese in mixing bowl.  Beat with hand mixer until well blended.  Add in spinach and mushrooms.  Beat well.  In the bottom of a greased 13x9 baking dish, put about 1/2 cup cheese spinach mixture and spread evenly.  Then layer in the following order:  noodles, cheese spinach mixture, spaghetti sauce, sprinkle with mozzarella and parmesan cheese then repeat for 2 more layers.  End with noodles, spaghetti sauce, mozzarella cheese and parmesan cheese.  (So basically you have three layers with the cheese spinach mixture and one without.)

    You can also make this exactly as above, but put into two separate 8x8 square baking dishes.  Of course, you'll have to break or modify the length and quantity of lasagna noodles.  This recipe also freezes extremely well and is best made a few nights or the night before.  Hope you enjoy!
