I am making it for the first time this week for a work event. Does anyone have a tried and true recipe? Otherwise I am using the highest rated from allrecipes.com.
I don't but it sounds delish!! I use allrecipes a lot. Just make sure you read the comments for recipe suggestions/alterations. They are usually right! Good luck!
I'm not sure if this is truly traditional penne al vodka but we like it and it's pretty easy. I just made it last night, actually!
1 lb pasta
1/4 cup olive oil
4 cloves garlic, finely minced
2 cans stewed tomatoes
2 tbsp vodka
1/4 tsp crushed pepper flakes
1 cup heavy cream (light doesn't work as well)
1. Cook the pasta as directed on the package.
2. Remove the tomato slices from the can and dice the tomatoes. Retain the liquid from the can.
3. Heat olive oil in large skillet. Add garlic, saute until starting to brown. Add tomatoes and liquid from can. Simmer, stirring occasionally, for 15 minutes.
4. Add pasta, vodka, and red pepper flakes to sauce and toss. Remove from heat, add heavy cream, and toss again. Cover and let rest for 2-3 minutes for sauce to thicken. Garnish with grated cheese if wanted.
