Engaging activity/ toy for 18-mo to last through appointment

Of course it's just my luck that I'll have to haul my 18 month old toddler to one of my longer than usual appointments. Of course I'll have her in the stroller when I have to chat with the doc BUT what games, tasks, playthings or whatever can I pull out to keep her occupied when she gets bored after exploring what she has at the time and in between snacking?

Any suggestions as to what has worked for you aside from having someone else watch them?

a magna doodle or aqua doodle- no doubt.

 We've gone through 3 between the two of my kids.  I like them because they're somewhat educational but still really fun and it teaches fine motor skills.
