What could I do with Pumpkin Juice/Water

I roasted a pumpkin and made puree, but then I drained it to make the consistency more like canned pumpkin.  I now have a bunch of liquid that I am sure is full of flavor and vitamins... It seems like a waste to throw it out. 

What can I do with it?  I know I could use it instead of broth probably to make soup.

Do you think I could make some kind of pumpkin sorbet with it?

Maybe boil it with sugar to make a pumpkin syrup?

  • I don't know if it would be flavorful enough to make a sorbet. If you boiled it down with sugar to make a syrup, you'd probably concentrate the flavor enough for it to taste "pumpkin-y" and not just like watered down pumpkin. What about mixing it into a fall-fruit smoothie?
