Well, I'm shopping for a two year old of course, but I'll answer anyway since most of it would be suitable for a 3 y/o too!
We're getting Holly (this will also be for her b'day, since it's Jan. 6) :
pillow pet (I got the Panda)
Ikea play kitchen & accessories (and some play felt food I made her)
big box of crayons and new coloring books (the big Melissa & Doug coloring pad, plus some regular books)
stickers (cheapo dollar spot ones, and a M&D sticker book)
Also on her list for the grandparents are: music instruments (bongos, xylophone, maracas, tambourine, and a pink ukelele.. hehe..She LOVES music time at school!), a ride on toy, some wooden puzzles and sorting games, a broom/mop/dustpan set, and a stuffed Elmo that doesn't talk or move (she's terrified of her Cookie Monster that rolls on the floor and laughs!), a M&D shopping cart (it's metal, like the ones at Trader Joes, which she loves), some books...
Olivia is getting the Tag reader, a 3 wheeled scooter - the neighbor kids have them and that's all she's been talking about, helmet and knee pads - for the scooter, and either a learning laptop or something like the leapster. Then she'll get some books and small stuff for her stocking. The scooter might wait until her birthday in February. We'll see. I know some of our relatives are getting her dress up clothes and one of those animal flashlights from little tikes. She's into flash lights lately.
I want to get Nate a wooden barn and some farm animals. That will probably be his big gift from us. I also want to get him a toy bus and a firetruck. I've already gotten him some Elmo slippers and some books for his stocking.
I have no idea what the grandparents will get him. I might point them towards some train toys and more books. Oh, and maybe an easel.
I also want to get him a Doodle Pro, since he loves these at friends' houses.
Great idea! J got this as a first birthday present (w/o the stencils) and has played with it regularly since then and is still going strong. It's definitely one toy that I never think of putting away or rotating out - he loves it! Especially when we write or draw something he asks us too. It's so fun!
Last year the girls got doll baby "stuff"...high chairs, baby carriers, baby beds, the whole works.
This year they'll be 4...and I'm stumped. They keep asking for a pet but I am in NO way ready for something like that. Thankfully we're renting and I can use that as my excuse for now, LOL! We might consider a fish? But, beyond that I'm stumped for this year. They're getting roller skates for their birthday next week. I don't know why but this is the one thing they've been asking for, so we'll see how that goes. Its hard having their birthdays the month before Christmas, I can't think for both of them! LOL!
Re: And what are you getting your 3 yr old for the holidays?
The things I'm considering for Natalie are (not getting all these -- this is just my list to look into):
Pillow Pet (definitely getting her and Claire one of these)
Toddler style puzzles
Learning laptop
Stamps/stickers/art supplies
Doctor playkit
Dress up clothes
Disney Princess tent
Tag Jr.
Wild Planet Animal Scramble game
Snap & Style doll

Liam's main gift from us will be a train table.
I also want to get him a Doodle Pro, since he loves these at friends' houses.
Also a stomp rocket, which he has also played with a few times and loved.
A few Thomas books/DVDs (he's obsessed). Some arts & crafts supplies, stickers, etc.
A pillow pet sounds like a great idea, especially since we may be doing the bed transition soon after Christmas!
