recipe raves...

After the menu plan post yesterday, all I could think about was the Mexican Cornbread Skillet Pie, so I tried it last night.  It was great!

I made a couple minor adjustments...for the filling, I subbed ground turkey for the beef.  I browned the meat, then added the peppers, onions, tomatoes (with seeds) and spices.  I let it cook on the stovetop for a few minutes while I mixed the cornbread ingredients.  I didn't have any sour cream, so I just added a little milk resulting in a drier cornbread, but still yummy.  I also forgot to add the cheese before baking, so I sprinkled a little on top before serving.  All in all, a great weeknight meal!

For those asking about the Chicken Tikka Masala, I use this recipe from allrecipes.  Not the most authentic, but it uses ingredients I have in my pantry and it's quick and freaking delicious.  I usually cook the chicken on the stovetop instead of messing with the grill.

I tried this naan recipe over the weekend and LOVE.  I couldn't get DH and my SIL to stop eating it from the plate as it came out of the skillet.  It's a really easy recipe, but a bit like pancakes.  It was tough to get the skillet to the right heat that they didn't burn, or enough oil that they didn't stick, but not too much so they were soggy.  I doubled the batch and we had a ton leftover.
