DH (and I) are hosting a (very) casual happy hour at our house this afternoon. He only invited his coworkers.
Due to taking care of my sick sister, working & scrambling to unpack, I haven't even thought of apps to serve! We have apples & caramel dip, so I'll slice the apples and serve that ... and Michael picked up a bunch of chips.
However, I'd like to serve a hot appetizer. I can stop by the store on the way home and ideally, I'd love to just throw it together in a few minutes and have it ready to serve in no more than 30 min.

A block of velveeta cheese + 1 cup of salsa + crock pot on low......great dip!!!
Grapes and pre-cubed cheese, or an antipasto tray...Olives, pepperoncini, buffalo mozzerella cheese mini balls, marinated mushrooms, mini pickles,etc...
Round of brie and a loaf of crusty french bread. Pop the brie in the oven to get it gooey. If you wanna be fancy, plop some chutney on top before you bake. Or some crushed nuts and honey. mmmmmmmmm

Dip Good Enough to Serve with Cardboard
8 ounces softened cream cheese
2 tablespoons chopped green onions
1 cup grated Swiss Cheese
1/2 cup bacon bits
1/2 cup mayonnaise
1/2 cup sliced almonds
Combine the cream cheese, Swiss cheese, mayo, and green onions in a bowl and mix well. Spoon into baking dish. Bake at 350 degrees for 20 minutes. Sprinkle with bacon bits and almonds. Serve warm on crackers (or cardboard).
You may substitute 1/2 cup of butter cracker crumbs for the almonds.
Oh, and bruschetta. Buy pre-sliced french bread. Toast in oven and top with pre-made bruschetta topping (in the spaghetti sauce aisle). Rub warm toast with a clove of garlic if you wanna get really fancy...
Block of cream cheese topped with some pepper jelly, warmed in the microwave until a little soft. Crackers to dip.
Smash cream cheese into the bottom of an 8x8 pan. Top with a can of hormel chili with beans. Top that with shredded mexican cheese. melt in oven = instant chili dip. goes well with the velveeta queso, above.
Mashed avacados with a packed of guacamole mix, to follow up on the mex theme.
Cheese straws/breadsticks stood up in a pretty glass/mason jar. Good for height on a banquet table.
Cocktail weiners in a mix of 1:1 ketchup and grape jelly, warmed in crock pot. (you can also use mini meatballs).
