When it's just me and DD at home, I have a hard time motivating myself to make something. Sometimes I'm so busy that I forget to eat! Usually I just resort to a PB&J or leftovers (if there are any!).
I work part time, but on the days I'm off, I eat a bowl of cereal for breakfast and usually a sandwich and chips or soup for lunch. I make sure I have healthy snacks so I can snack if I get a little hungry.

I always have a cup of coffee in the morning and usually cereal or a bagel. A lot of times I skip breakfast (bad, I know). Lunch is usually a sandwich or soup. I try to snack on fruit or nuts throughout the day. I'm pretty boring, lol
I am SAHMing it up today! I am a working mom, but took today as a work from home day since DD usually stays with my mom during the day and my mom was away for a long weekend.
Today, I had Kashi cinnamon harvest for breakfast and had a salad and a turkey and muenster wrap for lunch. I have a roast in the slow cooker for dinner. Hubby is going to be surprised, since we usually save dinners like that for the weekends.
When DD1 was a baby, I had whole wheat pasta with peas or some other veggie for lunch almost every single day.
Now I eat a little more "kid friendly" foods Well, kinda...
Breakfast is whatever I make for the girls: waffles, pancakes, oatmeal, cereal, yogurt, scrambled eggs, fruit, etc... + coffee for me!
Lunch is often whole wheat pasta with veggies, tortellini w/ side of fruit, organic chicken nuggets w/ apple sauce, sandwiches or grilled cheese (with tomato soup during the cold months), pasta salad, hummus served with whole wheat crackers and baby carrots, etc..
I usually have some tea or a glass of soda during nap time with a little snack; either some chocolate, veggie chips, whatever I'm craving at the moment
Then I start dinner around 6:30. Dinner is at 7 when DH gets home.

I usually eat breakfast along with DD and I typically make eggs, toast, waffles, pancakes, or oatmeal along with some type of fruit. For lunch we either have leftovers or I make things like grilled cheese, frozen ravioli, pierogies, chicken nuggets, fish sticks (which I don't eat), or just sandwiches. Sometimes I eat the same stuff as her and sometimes I'll make a salad or something. I try to keep it simple during thr day and make a nicer dinner, but I still get worn out from cooking and cleaning up from 3 meals a day.
For breakfast it's usually my coffee and meds, then something really simple like instant oatmeal or grits or cereal. For lunch, it's leftovers or a frozen pot pie or frozen noodles entree or Hot Pocket. Sometimes I'll have chef boyardee or macaroni and cheese. These days, it's whatever I have the energy and time to cook. Dinner, I've been slacking recently and either DH will pick up something on his way home or we'll order take out or cook a frozen pizza or something. It's usually a play it by ear kinda thing...
I usually have toast for breakfast, sometimes with peanut or almond butter, and coffee, of course. For lunch, I eat leftovers or a Healthy Choice meal, which I like because they have whole grains.
Honestly, I don't get that hungry, and I'm not a food person. If I could just take a "meal in a pill", that would be ideal. I'm waiting for someone to invent that:)
I eat apples, cheese, jello, dry Cheerios, or other fruits for snacks. And I have ONE piece of dark chocolate a day. Right now I'm eating Godiva (bliss), because I've been sick and DH felt sorry for me and bought them. Yum.

I usually eat oatmeal or toast for breakfast, hardly ever eat lunch (maybe some fruit or hummus with pita chips), a snack of almonds or fruit around 3 and dinner at 6. I'm not a huge eater.
I've been tracking my food at The Daily Plate, so I've been a bit better about eating regularly. I try to make extra at dinners so that we have leftovers. I also often make soup--Campbell's Fajita Chicken and Crock Pot Taco Soup are both low in fat and very filling.
I only eat when DS is napping or else he is bugging for whatever I"m having. I usually have left overs or a Lean Cuisine or sandwich and a yogurt if I have any.
