3 chopped carrots, 1/2 chopped onion, baby red potatoes
brown roast in pan then add all ingredients cook on low 5-7 hours (depends on how big of a roast). When everything is done use liquid to make gravy on stovetop. I always use "Wondra" for sauces it seems to work the best.
combine all ingredients and cook 4-6 hours on low. During hour 5 drop in small pieces of refrigerated Pilsbury biscuits, separate out the chicken and cut into chunks.
Chicken/Potato soup
1 bag of O'brien potatoes with green/red pepper
1 can of corn
3-4 frozen chicken breasts
2 cans cream of chicken, 1 can chicken broth
Cook on low 3-4 hours (make sure to shred the chicken or cube it before serving) I served ours with cornbread and topped it with shredded cheese and sourcream.
Coat the chicken with the cream of chicken and sprinkle the soup mix over the top. cook on low for 5-6 hours or until the chicken pulls apart. After you pull the chicken, add the tub of sour cream and serve over egg noodles.

Also one we love now is
1 bottle Red curry sauce (trader joes but I bet you could find it anywhere)
1 can ligth coconut milk
8 oz veg or chicken broth
6 potatoes cut into 6ths
a bunch of carrots cut into thick chunks
1 onion roughly chopped
throw it all into the crockpot (potatoes first, then carrots then onions)
cook on low until tender about 6-8 hours.
