nbr:stupid potato question

I'm making mashed potato's for dinner but was wondering, if I peeled and cut the potato's now ans out them on the stove in the pot with water if they would be ok or should I put them in the fridge?

    as long as they are covered with water you are good to go...my mom and I do this every Thanksgiving morning :)
