I've had a butternut squash in the fridge for a week, so I looked up some recipes and found one for a butternut squash casserole. I think it's going to be really good, but it won't be done until 6 and the kids are starving. I hate when I do that.

Yeah, that and when I can't actually make dinner because stuff 'comes up' with the kids. I'd love to hear how the recipe came out! It sounds great!
