Made 8 mini loaves of banana & 9 mini loaves of pumpkin bread

and tomorrow I gotta make my white chocolate cake for dinner at SIL's Saturday and 2 coffee cakes for Mandi's field hockey game tomorrow night.

After that I think I'm gonna be all baked out.

    Pumpkin Bread

    2 small cans or 1 large can of packed pumpkin ( not the pie mix )
    4 eggs
    3 cups of Sugar
    1 cup of oil
    1 cup of water
    3 1/2 cups of Flour
    1 1/2 teaspoon of salt
    2 teaspoon of baking powder
    2 teaspoon each of clove, nutmeg & cinnamon (can adjust to personal taste)

    Mix pumpkin & eggs
    Mix in sugar
    Mix in oil & water
    Mix in flour, salt, baking powder & spices

    Pour into regular size loaf pan or mini loaf pan ( I use the foil mini loaf pans)
    Bake at 350 degree oven for 1 hour for reg size 30-40 for mini size.
