Certainly! They're sooo easy! (I usually have to make extra frosting, but I have the feeling I like to use a lot more frosting than most folks.)
Snickerdoodle Cupcakes
Ingredients:
1 pkg. plain white cake mix
1 cup whole milk
1 stick of butter, melted
3 large eggs
1 tsp. vanilla extract
2 tsp. ground cinammon
Frosting
1 stick butter
3 ? cup confectioners sugar
3-4 Tbs. milk
1tsp. Vanilla extract
1 Tbs. ground cinammon
Preheat oven to 350 degrees and flour & grease or line your cupcake tin.
Place cake mix, milk, melted butter, eggs, vanilla, and cinnamon in a large mixing bowl.
Blend for three minutes (stop to scrape once).
Pour into pans and bake for 22-25 minutes until toothpick inserted in center of cupcake comes out clean.
Cool in pan for a few minutes then transfer to wire rack and cool completely.
For frosting: beat butter until fluffy. Add all other ingredients (alternating between sugar and milk) and mix thoroughly.
