We always make a meat sauce and start off with a piece of pork and sausage in the bottom of a big pain with olive oil and a whole onion peeled and cut in half. Oh and a few cloves of garlic
Once the meat is cooked pretty well...doesn't need to be fully cooked b/c it will cook more in the sauce. Then we add the cans of crushed tomatoes (we use Red Pack and Tuttorosso mixed) and a small can of tomato paste. We also like to get one green pepper, clean it out and cut it into 4 big pieces and toss that in
We then season it with oregano, basil, onion powder, garlic powder, salt and pepper. Cover and let it cook. We normally start our early in the afternoon and let it cook for a few hours on lower heat so all the goodness cooks in

I had it all written out and my page closed out..I only make my own, this is the recipe I made at the last Italian restaurant I cheffed at.
1 md onion chopped
2-3 cloves of garlic chopped
olive oil
1 lg can diced tomato
2 T tomato paste
fresh herbs, basil, parsley , thyme or the dried mix
crushed red pepper optional
salt and pepper to taste
I add some red wine sometimes too
Parmesan rind
saute the onions and garlic till soft, add paste, add crushed tomatoes and stir well, turn to low add spices etc. Let cook 2 hours, I have a stick blender I use b.c I don't like chunky sauce, serve as is if you like the sauce chunky. Otherwise blend, it freezes really well if you want to do a big batch too.
oh, take the rind out before blending, it's super good on some crunchy bread.
im making sauce right now actually started at 9 am
i make a ton in my big pot and freeze it.
so this is what i do
i use 8 lg cans of tomatoes or the contadina cans of "sauce" which is just blended tomatoes. it depends on if i can find cans of whole italian plum tomatoes. if using whole tomatoes put them in the blender.
2 large cans of tomato paste, or 4 of the little ones
garlic salt
garlic powder
onion salt
onion powder
basil
salt
pepper
and a bit of oregano
and then i brown some garlic in olive oil (about 4ish cloves, maybe more depending on if you like garlic) and then when it is done pour it into the sauce
