I think I read the foam is better but I can't remember where I saw that or why they came to that conclusion. It might have been in that Baby Bargains book.
From what I can tell, the foam
mattresses are lighter but more expensive. Is that the only difference?
Is the lighter weight worth the increased cost?
I went with foam. IMO, it will be worth the cost (and mine wasn't even that expensive) the first time I have to do a middle-of-the-night sheet change. I used to babysit a newborn with a coil mattress and changing her sheets was a BEAST.
ETA: I've also heard they're safer, although I didn't do the research to back it up. As long as you pick a nice firm one, I think you're fine.

I looked for th difference this weekend and everything I read said that as long as you get a good firm foam mattress it's the same as getting a good coil matress. A foam mattress is lighter and I found they are cheaper. The foam mattress we picked out is cheaper then the coil mattress we picked out. The coil is $170 from babies r us the foam is $119 from costco.
We have foam. Crib sheets are a PITA to change since they are so tight, so I physiclly heft the mattress out of the crib and change them on the floor, then drop the mattress back in. I dont' think I would be able to do that with a coil mattress. We paid $100 for our Colgate mattress, and I feel it was worth the expense.

Like PP mentioned, the most important thing is the firmness, regardless of the type. As for the cost, we were lucky and found a great Serta Crown Jewel coil mattress on sale at an outlet store for a ridiculous price, so we went for it. I can definitely see how changing the sheet on it could be a hassle though....so I may be looking into those ultimate crib sheet things or something similar.
We registered for the Sealy's Soybean Foam Mattress. I wanted something organic because of the PVC's and other chemicals that are used in mattresses that the baby can breathe in. I think it was like $170 on BRU.com. That, and the bedding we registered for, was a gift from my grandpa (mom just called to tell me yesterday) before he passed away Monday, since he bought my sister a crib.

We are also getting a soy bean. We are getting this one. I would look in to it because its alot cheaper then the one your looking right now. Its also a 2 in 1 so one side is nice and firm for an infant and the other side is softer for a toddler.
We got the Colgate Classica III, which I understand is what the baby bargains book recommended. It was $160 (the Classica I was like $140) and is foam. I don't know about coil v. foam- I just know that is what someone said the babybargains top mattress was.
