RP: Menu for the week?

One of my favs is crock pot chicken tacos. It's super easy and makes a ton! Put 4 frozen chicken breasts, 16 oz salsa, 1 bag of frozen corn, 1 or 2 cans of black beans in the crock pot. Cook on low for 8 hours. Shred with a wooden spoons. Serve with taco fixings. Makes great leftovers for taco salads, nachos, and even mexican baked potatoes.

Last night we did steaks with corn and heirloom tomatoes & mozzarella. Tonight we're doing pork tenderloin with grilled asparagus and salad. Wednesday night we'll do buffalo burgers with new potatoes and salad.

Clearly, my chicken aversion hasn't gone away.

This week for us is turkey meatloaf, grilled chicken breasts, fajitas and thats all I've got so far! 

For lunches i'm trying to make some chicken salad and will do wheat bagels with cream cheese, avacado, cucumbers, tomato.

I also bought some edamame to nibble on to help my salty side.

Tonight is meatloaf, mac and cheese, and peas (I'm trying to pretend it's winter).  Tomorrow grilled steaks. Wed Speghetti (or lasagna), Thursday I may be stealing that crock pot tacos!  Then Friday we are leaving for a wedding, so it will be a rehersal dinner.
