Thurs: Mini Meatball Sandwiches, Fries
Fri: White Chicken Chili, Tortilla Chips & Toppings
I'm also going to make a yummy Peach Gratin some time this week b/c my Dad gave me a ton of locally grown peaches. Mmm!

LOL, I've never made either one before actually! I got the coconut rice idea from Sarah a long time ago and I'm using this recipe:

Bsically, you just substitute coconut milk for the water.
For the flank steak, we grilled some last night that I had marinated with a Rachel Ray recipe. We had enough leftover so I decided to do tacos with it this week. We sliced it super thin across the grain and I will put it in soft corn tortillas w/shredded cheese, sour cream, avocado, tomato, lettuce, taco sauce. Pretty easy!
Last night DD and DH had left over pot roast, mashed potatoes and carrots while I went to The Melting Pot for "Girls Night Out".

Later in the week, I'm making "Lazy Day" stuffed cabbage rolls with mashed potatoes and green beans.....YUM!
