Anyone have any good salad, or pickle recipes or what not for using regular sized cucumbers? We have a million of them in the garden that I need to use and/or can in some way ASAP. Thanks!
My SO loves cucumbers. Usually he will just eat it with a little red wine vinegar, salt and pepper. But you can always add them into a salad or fry them up in a stir fry.
yeah- i have only jarred the sauce that i was going to give/use pretty much right away. I have successfully frozen the sauce as well. very yummy- it is a nice taste of summer even in the winter.
Growing up my mom made two cucumbers sides. For both she thinly sliced the cucumbers and half an onion. For one she added pepper and sour cream and let it sit in the fridge. For the other she added pepper and vinegar. Both are so simple, fresh and yummy.
Slice vidalia onion and cucumers, throw in some cherry tomatoes and cooked pasta of your choice. Mix together in any brand vidalia onion salad dressing. I've even made it without the vidalia onion and everyone always loves it. Super easy, refreshing summer dish.
I've been making this chilled, no cook, cucumber soup from an issue of Real Simple a few months ago--it could not be easier and it is yummy--and perfect in the summer heat. Obviously you can substitute the spices.
In a blender, puree 1 pound (about 2 medium) peeled and roughly chopped cucumbers, 1/3 cup sour cream, ? cup fresh mint leaves, 1 tablespoon rice vinegar, ? teaspoon kosher salt, and a pinch of cayenne pepper.
Serve chilled (seasoned with salt and pepper), accompanied by bread and cheese, if desired.

Have you ever tried any cucumber dipping sauces? I make them and can them for the winter.

I love dipping cucumbers into hummus. Yummy. Or using pita or flatbread and making a 'sandwhich' with hummus.

Cucumber boats are good too, I quarter the cuke, scoop out the seeds and put laughing cow cheese in it. Kids love it.
I also dice them up with fresh tomato and put a little zesty italian dressing on them!
