recs for restaurants between StL and Tulsa

We're going on a roadtrip and I am looking for recommendations for good restaurants between StL and Tulsa.  We are driving from StL to San Diego. I hope we make it without too much difficulty.  Any recs between StL and Cali would be appreciated also. TIA

DH went to college in Tulsa, and whenever I would visit him down there, we always had to make a stop at Carraba's in Tulsa.  It's a mid-priced Italian restaurant with some fantastic dishes.  Definitely a heavy lunch/dinner type of restaurant.  They are a national chain, but they've never been popular in STL.  (The one here closed a couple of years ago, not too long after opening.)
