If you've done a fondant cake

I need some advice. I am doing a marshmallow fondant for Cora's party on Saturday. It's a chocolate cake with raspberry filling and I'm doing a light chocolate frosting before I do the fondant. I was planning on making the cake Friday. Will the fondant be ok at room temp for 24 hours? It is suppose to be hot and humid Saturday but we'll be in the a/c so it will be around 70 in here. Or should I wait til Sat morning to assemble the cake? Put it in the fridge? Thoughts?

  • I never make my own I usually buy it in a tub but this is what I know.  Make sure it's in an airtight bag or it will get crusty.   I don't put mine in the fridge because it gets too hard to work with.  If it does get crusty on you, put some veggie oil on your fingers when you are working the fondant.

  • I've done several fondant cakes (but not professionally). You aren't supposed to put fondant cakes in the refrigerator. Keeping it a room temperature is absolutely ok.

    Please don't wait until Saturday to assemble the cake. In my experience, unless you are a professional, you will need the time for do-overs because things always go wrong.

  • Thanks ladies.It's a 3 layer cake with purple fondant and butterflies all over the cake. I'll feel much better if I can get the cake done tomorrow. I'll post a pic when I finish.
  • MMF never really hardens all the way, so leaving it out for a day will be fine.  Plus people usually don't eat the fondant because it's just so super sweet.  And what the pp'er said, never put fondant in the fridge. (That's because when it warms back up, the condensation will ruin it.)  The crazy amount of sugar in fondant acts as a preservative, and the fondant itself seals up the cake to keep it fresh.
