I'll Be Making Pickles This Weekend!

I've picked a dozen BIG cucumbers in the past 3 days, & I have 6 more that will be ready by Saturday. 

Pickle Batch #1 shall be bread n butter chips

this heat wave has my veggies going production CRAZY.

We're starting potato harvest this weekend, too, because the heat has quite a few of the plant tops dying.  There's a LOT of potatoes in the ground, so it won't be a wasted harvest by any means.  And then we're planting a second potato crop.  I'm going to make french fries & pierogies and freeze them for the winter, so we won't have potato overload.

I made one itty bitty tiny jar with the pickling cucumbers I got in our CSA share last week- I haven't busted into the jar yet, b/c I figure if they sit for a few weeks and "marinate" more, they'll be that much better. I'm hoping to make more, since pickles are about the only way I like to eat cucumbers.

Add me to the bread n butter chips rule train!  I didn't make any last year, but the 2 years before I did and they are amazing.  I have to bug my mom to come help me do some this year!

We did bread and butter over the weekend and dill today.  It's our first time doing pickles so I was nervous but the sweet ones turned out great.  How long do you let dill pickles sit before you open them to eat?  I'm DYING to crack into them!  I need advice oh wise one.
