All I have so far:
M: Turkey burgers with Gruyere, honey cornbread, some sort of veg
T: Chili, strawberry frozen yogurt
W: Grilled pork tenderloin, cilantro/ginger rice, corn
Also, what veggies are you doing this summer? DH is already tired of zucchini, which is a shame since I could eat it every day.
Re: This week's menu?
M- salmon with corn on the cob and cucumber salad
T- crispy chicken thighs with carrots and broccoli
W- ravioli with veggie marinara
T- pork tenderloin with sweet peas and rice
F- turkey sausage with peppers and onions over pasta
For veggies, I love zucchini too! Peas and asparagus are in season here now so we've been having them a lot. I could eat cucumbers every day (and tend to!). I'm looking forward to green beans- our garden should have some in the next few weeks.
M - left over grilled pork loin (yum), rice, veggie (peas?)
T - Taco Soup (I'm working but cooking before I head out)
W - Pizza or McD or frozen nuggets (I'm working and have to be there early so DH is either meeting me at the office and taking the kids to McD or he's coming home somewhat early and ordering pizza)
Th - Baked stuffed chicken (DH requested), asparagus
F - burgers and hotdogs grilled
S - out/left overs
All I know so far is:
M - baked ziti and garlic bread
T - leftover ziti and garlic bread (LOL!)
(BTW, are we the only ones who ever have leftovers for dinner? Ha ha. We make sure to have at least one meal a week that we can have twice, for budget reasons....or do you eat the leftovers as lunch? Hmm...that would make sense...Okay, now I'm just having a conversation with myself...)
DH will be OOT from Wed-Fri, so Wed & Thur night are just DS and I. I'm thinking one night will be breakfast for dinner (pancakes or french toast, and turkey bacon) and maybe another night do English muffin pizzas. Who knows? We'll have to see how it goes. Of course, when DH goes OOT, Cole and I usually have a "date" to McDonald's so...we might just do that one night instead, based on how tired I am.
RE: Leftovers. We usually end up taking them for lunch the next day, but if we have enough, we will eat them at dinner too.
Monday: Chicken Alfredo Pasta with Green Beans
Tuesday/Wednesday/Thursday: Not sure what we're having each day, but our options are Eggs, Homemade BBQ Chicken Pizza, or Chicken Enchiladas with Rice
Totally. I am a completely optimist in the menu planning department. I make a menu plan for 5 days, but without fail we have leftovers at least 2 of those days (plus lunches, too), and then we'll go out to eat or whatever. So my 5 days of planning will actually stretch out to 10 days or whatever. It makes no sense to cook every night when DH is only home for dinner during his "weekend." The last time I made dinner at home was Friday, I think. Saturday we went to a friend's BBQ
M: leftovers
T: steak fajiats with homemade guacamole
W: Meatball subs
R: BBQ chicken legs and grilled corn on the cob
F: stuffed peppers in the crock pot.
Summer veggies - we do a lot of asparagus or corn on the grill. I also love cucumber salads. Cucumbers, jalepenos, tomatoes, and balsamic vinegar, and a little cilantro. Yum!
Going to try PW meatballs and chicken spaghetti this week; excited about how it will turn out. I tried her chicken fried steak last week and it was a hit.
Had taco soup tonight. Not sure what else.
