My cousin is a crappy milk producer. She is not preggers yet, but I was thinking that if she gets KU before DD weans that I could keep pumping for her LO. I mentioned it to her and she didn't think it was strange, but I don't think she knew that I was serious? Would mature BM be okay for a newborn?

I don't think mature milk will provide the proper balance of nutrients for a newborn. I've read that when people donate/buy EBM from donation centers, they try to match LO's age to the "age" of the donated BM. Since its components change over time- tailored to LO's needs, I would worry that such an age difference would matter.
ETA: I just re-read your ticker, if you started BFing 3 months ago, it's not as big of a difference as 5 months (your LOs age). That may not be so bad... I give DS freezer stash milk that is 2 months old, although that's only 2x/day... maybe ask an LC for their professional opinion?
You didn't go into much detail about how/why she is "a crappy milk producer".... but I think that in the big picture it would be a lot better for everyone involved if she was to get good support from the start and the effort went into protecting and managing her supply- rather than replacing it.... your offer is very generous- but I can also see your belief that she once again won't be able to produce enough as a pretty discouraging thing.
"My grandma's car runs awful, so I offered to drive her wherever she needs to go in my car from now on." (...how about helping her take her own car in to the shop so she can get it fixed and be self sufficient?)
