DD asked if we could have pasta for dinner. With the heat, I really don't want to make a sauce. Does anyone have an easy to toss together recipe with minimal effort/ingredients?
This is my 20 minute sauce which people, including the kids, love. It does require some cooking but is super easy.
Heat olive oil in pan on medium. Add 1 chopped onion. Cook until well done. Add 3 garlic cloves well minced or pressed. Stir and cook until fragrant, about 30 seconds. Turn heat to high and add 1 cup white win. Simmer about 2 minutes. Add 2 cans stewed tomatoes (you can also used diced but stewed is extra yummy). Simmer for about 3 minutes, breaking up tomatoes. Off heat, add 4 Tbsp butter and swirl until melted.
Serve with angel hair pasta.
Also, before making the sauce, you can saute about 1 # peeled raw shrimp, seasoned with s&p (before cooking) in the same pan. Don't stir too often, let the shrimp get a little singed and with some sticking to the pan. Remove shrimp before making the sauce, and add the oil and onions as above, scraping up the shrimp pieces into the onions while you cook it.
My go-to quick meal is to sautee a bag of frozen mixed veggies is garlic and olive oil then toss over pasta. I don't even turn the pan on until the pasta goes in the water.
I sautee onions, bell peppers, calamata oives, garlic, grape tomatoes and matchstick carrots in olive oil and put them with cheese tortellini and add some feta.
A summer favorite for us is any kind of grilled meat (chicken, hamburgers, steak, etc.) with a side of cooked pasta tossed in a little butter and shredded parmasean cheese. Add a salad or some fresh veggies and you're good to go.

Pasta(any kind, but I like bow-tie)
1/2 tub fresh mozzerella balls marinated in olive oil and herbs(in the fancy cheese section of the grocery store)--halve or quarter
2 roma tomatoes chopped
fresh basil
cold chicken breasts chunks
2 tbsp of the olive oil/herb mixture from the mozzerella tub
dash of balsamic
Toss all ingredients together and serve with french bread and a salad.
great summer dish: lukewarm pasta tossed with feta, watermelon chunks, black pepper and fresh mint. YUM.
Or, you can make penne with broccoli rabe and turkey sausage with toasted garlic and olive oil. That's always tasty.
