Tonight:  Chicken Fajitas, Mexican Rice, Blue Corn Tortilla Chips w/Pineapple Salsa, Sopapillas

Monday:  Pasta Ponza, Rolls, Salad

Tuesday:  Brocolli Soup, Mozzarella en Carozza (Italian Deep Fried Cheese Sandwiches)

Wed:  Grilled Sirloin, Sweet Potatoes, Veggies

Thurs:  Pot Roast, Carrots, Mashed Potatoes

  • Your menus always sound so good. We are on the most basic menus lately because I'm just too exhausted to try any thing ambitious. Tomorrow we are going over to mil's house. Other things that sound good to me include; lasagna, squash casserole, um..... I have no idea what else. Lol

    Thursday:  Pizza, it's Jaxon's 1st Birthday!!! *sniff*

    I am less than motivated to cook exciting things this week...I am making everything for Jaxon's party Saturday (in Scottsboro), and that includes his cake, smash cake, cupcakes (for daycare here), and sand pail cake.  This all has to be transported 4 hours.  Please pray for my sanity.

    Then, Saturday morning I have to finish everything else on the list!

  • Monday:  cheesy chicken n rice casserole, roasted broccoli

    Tues: honey mustard pork chops, mashed potatoes, kale

    Wed: rigatoni with meat sauce, salad, homemade italian bread

    Thurs: spinach pasta, salad, rest of the bread (oh no pasta 2 nights in a row!)

    Friday:  homemade pizza (it's a tradition!)

    Sat: meatloaf, mashed potatoes, peas (dad's fav since they are visiting :)

    Sun: grilled steak, grilled corn, salad, homemade yeast rolls

    Cooking is becoming so hard.  Nothing sounds appealing anymore, even though I'm starving, so dinner has become quick and easy.

    Tonight: Italian sausage w/ pasta, squash, zuchinni and tomatoes

    Tomorrow: Cajun chicken, yellow rice, broccoli

    Wednesday: Hot dogs and chips

    Thursday: Mediterranean couscous salad

    Friday: Sloppy Joes and fries

    Ha!  Organized?  Not so sure about that!  Not these days...  I mainly do the WFD post so that I will be motivated to make out my menu and grocery shop.  I also like to get ideas from other people.

    Yeah!  I'm excited to make them!  I just saw them on "Secrets of a Restaurant Chef" the other day and have been craving them ever since!  I've actually had it in Italy...funny enough, they serve them with breakfast!  YUM!

    Mmm!  I love homemade breads and rolls!  What do you use for your pizza crust?  Do you make the pizza dough yourself too?  I love the idea of homemade pizza...I just usually don't like the ready-made crusts very much.

    Thanks :)  I'm not going to lie...the yeast rolls are Pillsbury hot rolls from a box.  for $1.66 the measuring is done!  it makes a lot too. My fam still gives me credit for 'homemade' since you still have to knead the dough and let it rise, etc.

    I use the pizza dough recipe from moneysavingmom.com (I sub olive oil for the veg oil though).  One recipe's worth is easily 2 crusts for us. By the time the oven heats up the dough is ready including the 5 minutes of kneading.  If I'm being lazy I put jarred sauce in the blender to make "pizza sauce".

    Hint 1:  put your pan in the oven while it pre-heats to get a nice crust on the bottom.  I use my cast-iron griddle.

    Hint 2: the recipe says to cook for 15 minutes, but I cook the crust by itself for about 8 then take it out and top it with the sauce, cheese and toppings then finish baking.  That way the sauce doesn't make the crust soggy and the cheese isn't over cooked.

    I have a flatbread pizza recipe that I could post if you'd like!  I make a Caprese Pizza with it....it's SO yummy and easy.

    I made them tonight and, must say, I was a little underwhelmed.  I didn't make the sauce to go with them and think that would have made them alot better.  They were just kinda bland, ya know.  Fresh mozz doesn't have a ton of flavor, so they just weren't too exciting.  But, maybe the sauce would have taken them up a notch!

    Thanks!  Sounds delish!  And, as for the Pillsbury rolls...there's nothing wrong with getting a little help from the store!  I'll have to look for those.

    Definitely post it!  I LOVE Caprese and I love pizza so I'm sure it would be great.
