DH has been tres inspired lately with dinner and had to share two recipes he has made lately that I LOVE LOVE LOVE. Thought you may enjoy:
Christina Cooks: Stir-Fried Bok Choy with Garlic and Ginger
2-3 Tbsp Extra Virgin Olive Oil
2-3 cloves garlic, thinly sliced
1 Tsp. finely minced fresh ginger
Generous pinch red pepper flakes
Sea salt
1 Med. bunch bok choy, rinsed well and stem tips trimmed
Brown rice vinegar (we used regular rice vinegar b/c couldn't find brown)
- Place oil, garlic, ginger, pepper flakes in skillet on medium heat.
- As soon as garlic begins to sizzle, add pinch of salt
- Slice bok choy into bitesize pieces and add
- Season lightly with salt and saute until bok choy wilts and turns deep green (5 min)
- Remove from heat and sprinkle lightly with vinegar

Always exciting to find a good crockpot recipe for vegans/vegetarians! DH didn't add the bell pepper or the spinach because we didn't have on hand; he instead added peas. He made it extra spicy and we served with Basmati rice. We had it last night fresh and I just ate it as leftovers tonight. DD even adores it and chows down on the carrots and potatoes.
