Our breakfasts and dinners are generally healthy, but I tend to slack off seriously at lunch time and my kids end up eating a lot more mac n chz, hot dogs, grilled cheese and chicken nuggets than they should. I'm trying to make healthy eating choices a part of daily life for all of us, especially since DS#1 and I could afford to lose some weight. Any suggestions?

I agree w/cleo. Or just keep the lunches light like quesadillas or whole wheat sandwiches with a salad, homemade english muffin pizza, soup.
Will they eat soup? When I'm being good, I make a big vat of soup for the week and when I'm not being good, I buy a bunch of canned Amys soup (there are lots of low sodium ones). The girls' favorites are black bean soup, tomato bisque, and lentil.
Quesadillas are good too, you can sneak black beans and veggies in with the cheese.

We do quesadillas, pb&j, natural turkey & cheese sandwhiches, whole wheat english muffins w/ cr cheese or hummus, bean burritos. We also do a decent amount of grilled cheese/ grilled turkey and cheese. You can use 2% cheese and spray butter to make it healthier.
I don't think mac&cheese and chicken nuggets are that bad if you serve healthy sides. We almost always have yogurt and fruit or carrot sticks at lunch. We don't eat chips at lunch or dessert afterwards either.
