Cooking question...

Usually when I make brisket I do a smaller 2-3lb piece of meat, marinate overnight, and cook on a low temp all day.It comes out falling apart and so tender.

Last time I made brisket I got a 12lb piece of meat, did the same thing. It came out pretty tough. We went ahead and ate half (over a few days) and froze the rest.

How can I salvage the frozen part to eat again? Is it overcooked? Did I not use enough marinade? I cannot figure out what went wrong. Can I put tough meat in the crock pot with some kind of liquid to soften it up?? What to do??

    I would not finish it, sounds like it was just a bad piece of meat, too tough. You could try soaking it in something and or putting it back in a crock pot and let it heat up slowly, put it in there frozen and cook on very low, that might help

  • Might have just have been a bad cut and would have been tough no matter what. Maybe do the crock pot thing with a gravy/sauce. Or even pull the meat and make pulled meat sandwiches.
  • you could try the crockpot thing and shred it, it may just not have been cooked long enough to get tender enough. We had brisket for Christmas and I made up a hash with it the next day. My dh, who hates everything, loved it and ate most of the pan! I just sliced it up and threw it in the pan with hasbrowns, onions and some salt and pepper. I cooked the meat on low with some olive oil and the onions and then added to the potatoes.
