Need a good cornbread recipe

I have one that I've used for years, but I want to try something new.  Got one?

  • I always use the one off the box of Albers Cornmeal...it's the one I grew up with, so it reminds me of being a kid.

  • OMG, I made this last night and it is amazing. Let me see if I get this right

    1 C Yellow corn meal

    1C Flour

    2/3C Sugar                                       MIX

    1/2tsp salt

    1/2tsp baking soda

     

    1 stick melted butter

    2eggs                                               MIX

    1C buttermilk

     

    Then mix it all together, don't over mix bake in 8x8 or 9x9 350 25-30min

     

    AMAZING, I hope I got it right.

    This is almost like my great grandma's recipe that I make all the time, except that her's calls for 3/4 cup sugar. It is so delicious! Even picky people love it when they come to my house.

  • This one makes a lot, so I usually halve it. I substitute green chilis for the jalapenos.

  • I use this blueberry corn muffins, minus the blueberries.  It's more of a corn MUFFIN, slightly sweet, but yummy.  H and kids love it:

     

    1 cup all-purpose flour1 cup yellow cornmeal1 tablespoon double-acting baking powder1 teaspoon salt1 stick (1/2 cup) unsalted butter, melted and cooled1 large egg1/3 cup honey1/3 cup sugar3/4 cup milk2 cups picked over blueberriesimagepreparationIn a bowl whisk together the flour, the cornmeal, the baking powder, and the salt. In a small bowl whisk together the butter, the egg, the honey, the sugar, and the milk, stir the butter mixture into the flour mixture, stirring until the batter is just combined, and fold in the blueberries. Divide the batter among 12 buttered 1/2-cup muffin tins, bake the muffins in the middle of a preheated 425?F. oven for 15 to 20 minutes, or until they are golden and a tester comes out clean, and turn them out onto a rack.
