For our Passover dinner, we were asked to bring a starch dish. We can't have anything with bread, pasta, or rice...any ideas (likely have to be potatoes). Also, I will have to cook this in advance and then we have to drive an hour to the dinner.
Any ideas (easy ones, i'm not a great cook)?

Veggie bean soup or lentil soup or potato soup
Three bean salad
Hummus and chips
Corn bake (I rarely serve corn but my niece makes a corn casserole)
Squash or sweet potato casserole
Scalloped potatoes - potatoes au gratin
All of my family gatherings are at least an hour or more away. I take the food out of the oven just before we walk out the door and wrap it in two beach towels. I have one of those casserole "holders" that has a heat pack and I still wrap it with beach towels. The food is still hot when we open it up.

Pretty much for any and every holiday I makde these twice baked potatoes. I make them in advance, and then I warm them in the microwave until they're heated through, top with the extra cheese and bacon, and then stick them in the over for about 10 minutes before serving. They are actually better when made in advance, and everyone raves about them! I leave out the onions.
