I couldn't access the Lion ones (I thought I had registered there, guess not). The Rav ones look like there's a lot of shaping going on, which isn't necessarily hard, just very fiddly.
Depending on what fiber you're looking for, Knit Picks Palette is a great fingering weight. It's wool, it comes in a million colors and is $1.99 for a solid 50-gram ball, $2.19 for a heathered 50-gram ball. If you're not looking for wool, they have a cotton/linen blend, I think it's listed as worsted, but I think it's more DK. It's great. They have new colors coming out in that one sometime this month.

Well, they all seem to have some shaping, but of the 4, the easiest would probably be the Perfect Sundress from Lion. The pockets might be a little fiddly, but you could leave those off.

I love the french holiday dress...that's super cute and looks reasonably easy.
I like knit picks shine (cotton/modal blend) and that comes in a sport weight. Berrocco Touche is really nice, too.
I think the French Holiday is my favorite. She requested RED for a dress so, um, good reds are hard to find. gah.
