I'm so tired of the same boring meals - give me something new and exciting to do w/ chicken breasts this week!

Cranberry Chicken
4-6 frozen, skinless chicken breasts
1 c. whole cranberries
1/2 cup water
1/2 cup sugar
2 T. dried onion
1/2 c. western dressing
Preheat oven to 350. Grease glass pan. Place frozen chicken breasts in pan. Put cranberries, water and sugar in a saucepan. Cook until cranberries pop. Take off heat. Add dried onion and western dressing. Pour mixture over chicken and cover pan. Bake for 1/2 hour. Uncover pan and bake for another 1/2 hour.
Recipe may sound strange, but it's one of my favorites!! I usually make Uncle Ben's wild rice and have corn with it....I tend to drizzle the cranberry sauce on the rice. Yummm....

That sounds really good! What is Western Dressing?
Here is my favorite:
Salsa Chicken
4 boneless, skinless chicken breasts
1 cup salsa
1 package taco seasoning
1 can cream of mushroom soup (condensed)
1/2 cup reduced fat sour cream
1 can black beans (drained & rinsed)
Frz corn (however much you want)
1 c rice
2 c water
Add chicken, salsa, taco seasoning, soup, sour cream, beans, & corn to crock pot. Cook on low for 6-8 hrs. Shred chicken, cook rice, add rice to crock pot when ready to serve. Serves 4-5.
I like to serve this either on its own or as a taco filling
Rach - Western Dressing is just a salad dressing...it's with the Ranch and stuff. It's red.
Your Salsa chicken is something that I do in the crockpot. Haven't added the taco seasoning before, but now I probably will. Haven't done the cream of mushroom soup either....Looks like I'll be having this soon too!
