Trying to alter a recipe that usually cooks in a 5(ish) gallon stock pot on the stove to in a little (and I didn't used to think it was all that little) crock pot is a big PITA.
But, I think I have it now. It just won't yield near as much as it normally does and despite the fact that the crock pot is completely full and there are still more things that go in the soup at the end, DH and I will probably eat every last bit of this soup tonight. It's that good.
I think my biggest problem is writing the recipe. It seems like a ton and a half shiit to do, but even when it cooks on the stove it's a long drawn out process.
ETA: I guess the long drawn-out-ness is what I get for using an Italian recipe. Meh.
Re: buckin
I hope it will be worth it.

But its GOOD you are doing it this way. If its that tasty do you really need a whole 5 gallon stock pot full?? LOL
I can't wait to see the recipe!
