s/o: Okay when serving a salad with pasta. . .

What kind of veggies do you put in it to give it some nutritional value.  DS will eat salad all day long (and DD will eat a bit of it too).  But aside from the standard lettuce, tomato and cucumber, what do your kids like in theirs.  I think DS would be happy with lettuce and enough ranch dressing to sink a ship.  My kids are great healthy eaters, but I feel like I am in such a rut lately.

  • chick peas, black olives, cheese, carrots, maybe some protein like tuna or lunch meat? I wish my kids would eat salad. You are lucky!
  • brocoli, green peppers, red cabbage, black olives- pretty & tasty

  • red and yellow bell peppers, black olives, broccoli, and whatever dressing

sometimes I do spring mix with goat cheese, walnuts, red onion, cranberries and a vinagrette.

sometimes I do a spring mix with strawberries, blueberries, pecans, poppyseed dsg

baby spinach, red onion, cranberries, vinagrette.

I like apple slices in salads too.

  • Our family loves Greek salad so...beets, cucumbers, tomatoes (I know is a fruit), black olives, feta cheese and chickpeas (not a veggie...but I think good for protein maybe).  My kids love beets and cucumbers (even though cukes are high in nutritional value they are good roughage - my way of thinking).  I also serve another veggie though.  We serve it with Green dressing but you can use any...my personal fav is Raspberry vinegarette.
  • My ds loves salad too. I put on whatever I have - mushrooms, broccoli, cauliflower, green beans, red, yell, and green peppers,
  • My son likes orange and yellow peppers...
  • We buy big tubs of mixed baby greens and usually use those with:

Greens, toasted pecans, goat cheese and dried cherries with a yummy vinegrette.

Greens with carrots, celery, tomatoes, cucumber, etc. and an Italian-style dressing (we only have this in the summer usually when tomatoes, peppers and cucumbers are in season.)

Greens with sliced pear, walnuts and gorgonzola or blue cheese

Or sometimes baby spinach with dried cranberries, goat cheese, and a yummy sesame seed dressing

Greens with olives, tomatoes, cucumbers and feta with a Greek dressing

Romaine with parmesean cheese, crutons and Caesar dressing

Greens with carrots, chickpeas, hard-boiled eggs, crumbled bacon and French dressing

  • I like mine Italian style..Romaine with green/black olives, salami, prochuito,  shredded mozz, green peppers, tomatoes, Italian seasoning, red vinager and EVOO.

    Yummo.
