Because some of my coworkers find it hilarious to bang on the door and jiggle the handle like they are coming in just to mess with me! I always think that someone is really trying to come on!!!

That is obnoxious. One of my coworkers actually got out her key and unlocked the room I pump in a walked in...no idea how she didn't realize that's what I was doing as I do it at the same time and place every day. I know she was more embarrassed than I was!
I was walked in on once. I never got quite as much pumping in that room after that. I had one coworker tease me about how I was going to 'pump and dump', which also drove me a bit crazy. Then there were those that were completely supportive and shared their own pump at work horror stories! I can't say I'm sad those days are gone (still BFing, but no longer pumping).
I'd be livid with the 'knob jigglers'.

You should do the same to them when they're using the bathroom. Go up to the stall and start jiggling the door. Try to peek over. See how they like it.
Hmm, you might need to bring in some cheese and crackers to leave in the break area on Monday...and then after they eat it tell them you made the cheese with leftover breast milk.
