HEALTHY way to make Chicken & Dumplings?

IS there a healthy way to make this?

Probably not.

This is how I normally make mine..

I boil a pot of water, milk, 1 large can of family sized cream of chicken soup. Add chicken broth till its the right consistency. Pepper/season. Wait for it to boil, then once boiling I add about 2 cans of fluffy pillsbury biscuits tore into tiny pieces. Then I add my cooked/shredded chicken.

It is DELICIOUS this way but all the biscuits, plus sodium makes me cringe. So any ideas?

If not, I'm still making it. Sounds so freakin GOOD!

  • you can use low sodium broth and healthy request chicken soup and heart healthy bisquick to make the bisquits.  I have used these for chicken pot pie.  Its good,  but it is DEFINITELY not as tasty as the full fat recipes.

  • We use low or no sodium broth and cream of chicken soup, throw in some diced raw potatos and let it simmer until the potatos are softened. Then we throw in the noodles and allow them to boil until al dente. We then scoop in spoonfuls of our own dumpling mixture (we use Jiffy mix, but most other baking mixes have a dumpling recipe as well, i.e. Bisquick or Pillsbury). Most of the things we use we are careful to make sure they are low or no sodium, as my Grandmother is a diabetic and I have a heart condition. Still turns out amazing, and if you want it more salty you can always substitute Sea Salt instead of Table Salt Smile. BTW, Grandma is a former cook and the recipe I use is hers, LOL.

  • I have the eating well website old fashioned chicken and dumpling recipe on my fridge.  It was really good and relatively healthy.  I bet you can find it on the eating well website.

    Noodles? Potatos?? In chicken n dumplings? Giirl, you haven't been to Texas. LOL! Here people would just call that...soup. LOL Although, alot of people here make it with tortillas, its apparently another "southern" way to do it, I just always preferred biscuits.

    Thats true... on the low sodium broth and soup... Didn't think of that! May pass on the heart healthy bisquick though, that sounds like it might come out tasting like cardboard and not dumplings.. LOL

     

  • I used Sandra Lee's Semi-Homemade recipe on the Food Network's web site. SO easy. And I think it was pretty healthy besides the biscuits. I halved the amount of chicken stock because I wanted it thick, and it turned out GREAT!!

  • I have made it using the light bisquick and I thought it came out pretty bood.
  • We also use the Sandra Lee recipe, but I tend to omit the cream of chicken soup (because I forget and we never have it on hand!) I also prefer mine a little thinner, yet DH just made it ...thick as thick can be!! We also use low sodium broth.

    Personally I want to find a healthier cheese biscuit recipe!! LOL

    I've made it with tortilla's & they get puffy and actually taste pretty good!!  But I agree......DH is from texas and has never deemed any of my dumpling variations "authentic" 

  • We cook it the "Italian" way, LOL. Grandma calls it the "everything but the kitchen sink" variety, and it comes out super thick and very delicious. Then again, we also put potatos in our spaghetti sauce, the starch helps thicken the sauce and they're AMAZING when they're done! That, a few meatballs, some italian sausage... Holy pregnancy cravings, I think I know what I'm making for dinner tomorrow! LOL
