Bump article about recipes

Hi everyone! I was hoping you could help me with a story for TheBump. We're compiling a list of recipes from users like you that arequick, healthy, and easy for moms-on-the go. What's your go-to tastymeal or snack? Please include a brief list of ingredients and directions.

  • Savory Turkey Burgers, quick and easy and my husband actually loves them!

    Burgers
    1 lb ground turkey breast
    1/4 cup quick-cooking oats
    1 tablespoon A1 sauce
    1 teaspoon salt-free seasoning blend
    1 small onion, finely chopped (1/4 cup)
    1 egg white
    4 whole wheat burger buns, split
    4 lettuce leaves
    4 tomato slices

    In large bowl, stir turkey, oats, A1 sauce, seasoning blend, onion and egg white until well mixed. Shape mixture into 4 patties, about 3/4 inch thick.
    3. Place patties on grill. Cook uncovered over medium heat about 15 minutes, turning once, until thermometer inserted in center of patty reads 165?F.  

    (I use my george forman and never have to flip and it cooks in about half the time!)

  • This is one of my favorites and always a hit.

    Salsa Verde Pork Tacos

    1 pork tenderloin or butt post

    2 jars of salsa verde

    Chopped fresh jalapenos (how much is your discretion)

    Add some chicken broth if the meat is not covered by the salsa, cook on low in the crock pot for 6 hours.  Take the meat out, shred, and serve as you like, ie tacos, burritos, tostadas, quesadillas.

    I usually will chop some onions and cilantro for garnish, and add a little of the reserved cooking liquid.  Sour cream is good as well.

    My go to is stir fry - whatever veggies you can find at the farmers' market - broccoli, peppers, green onions, whatever. 

    Thinly sliced lean beef or chicken marinated for a bit in some soy sauce and garlic. 

    Start the rice maker.

    Cook the meat in a wok with a bit of oil for a few minutes, set aside.  Cook the veggies for a few minutes, set aside. Add the cooked rice, meat, and veggies to the wok and toss together.

    Healthy, cheap, and quick.
