If you have a recipe that calls for a cream of something soup, but you don't have any on hand, what can you use instead?
I just want to do and easy chicken and rice dish tonight and thought I had the soup in the pantry, but I don't.
Any substitution suggestions?

if you want it cheesy you can melt cheese mixed with milk, throw some garlic, pepper, basil in there (or make it mexican with chili powder & cumin)
you could do milk and a bit of butter, 1/2c chicken broth, spices
