Toddlers: 12 - 24 Months

let's break some tension - looking for a recipe!

I just want to make rice with cheese and broccoli in it. Just like the rice-a-roni packs, but homemade and minus all the MSG/sodium.

  • I'd get some minute rice, throw some velveeta cheese in it and some cooked up broccoli.  Some seasoning, maybe (I just throw in whatever looks good to my recipes) and you should be good to go!  You've still got the processed cheese, but it's way healthier than the Rice-a-Roni stuff.

  • But why do you need a recipe when you already know what you want to go in it?

  • Package of frozen broccoli (or fresh)

    Shredded cheese (however much you want...we use 6 oz)

    Minute Rice (we use Uncle Ben's whole grain)

    1 can of heart healthy, low sodium cream of chicken/mushroom/whatever soup

    1 can-full of milk

    Mix everything together in a casserole dish then bake for 30 minutes at 350 degrees.

     LOL, i know that does sound kind of weird..but I don't know the right amount of stuff. I want to use "real" cheese so I don't know how much milk, etc. I guess I could just guess and adjust???

  • It doesn't really taste like the packets.  I cook my rice and mix in sour cream, cooked broccoli, salt, pepper, and cheddar.  I don't really have measurements since I sort of dump.  I also add cooked chicken or ham to this.

    Ok, now I feel dumb for making my "why recipe" comment.  This sounds yummy!

  • I make a cream sauce (butter, flour, milk, salt/pepper) and add cooked broccoli and cheese. Then I fold in cooked rice. If I want to bake it, I also add a beaten egg, put in a greased casserole and top with buttered breadcrumbs.

    hmmm this sounds good. How thick do you make the cream sauce? as thick as gravy?

    Yeah, pretty much. If I'm going to add the egg and bake it, I might make it a little thicker, but not much.
